Sourdough Date Squares

These sourdough date squares are great with afternoon tea or an easy treat to whip up when company is coming for the weekend. 

Ingredients

Filling

500g chopped dates or other dried fruit
160g water
160g orange juice
10g pure vanilla extract

Crumble

76g coconut oil (melted)
100g pure maple syrup
50g sourdough discard
200g rolled oats
180g Spelt Whole Grain Flour
5g baking powder
10g cinnamon
10g salt

Method - Filling

Combine fruit, water and orange juice in a pot and cook on medium heat until the fruit has absorbed most of the liquid. Allow to cool slightly, then stir in vanilla. If you prefer a smoother filling, pulse in a food processor or use an immersion blender. Allow to cool completely before using.

Method - Crumble

Step 1

 

In a bowl combine dry ingredients, whisk wet ingredients together then add to dry ingredients. Mix until no dry lumps remain.
 

Step 2

Preheat oven to 350F and grease an 8x8 square pan and line with parchment.


Step 3

Press a little over half of the crumble into the bottom of the pan (about 360g) spread all of the filling over the crust and sprinkle the rest of the crumble on top lightly pressing it into the filling. 

Bake for 20 to 30 minutes until crumble is set and golden.
